Open the "Start Here" icon on your desktop (or open Nautilus, and go to
the "Desktop" folder. Open the "Applications" folder. Put any shortcuts
you want in the appropriate sub-menu folder.
Alternative:
Open the Gnome main menu normally. Move your cursor to the subfolder you
want to put the shortcuts in (let's say it's Applications=>Games). Once
the "Games" submenu is displayed, select any of the games in the menu
and right-click.
Go to Entire Menu=>Add New item to this menu. Add whatever you want.
