Hi,
Recently there was a post about open-xchange and an unofficial-ebuild in
Bugzilla (b.g.o). Not sure but think this is an Exchange-alternative
(http://open-xchange.org). Check.
Also check (was Ximian-Connector) now - Evolution-connector & Evolution
for a client side.

Since I am searching for the same for a while now, here are my experiences:

OpenGroupware:
looks good, includes a webinterface, but as I noticed not all Exchange
features for Outlook are supported

Exchange4Linux:
One of the favorites, installation from source without any problems.
Outlook clients can connect, but I have no idea how to set Permissions
etc. There is not much documentation on this :(

EasyGate Server:
Based on Exchange4Linux, include webinterface, VPN, PPTP, Webserver,
Fileserver, etc. But you have to pay for it

Samsung Contact:
Looks very mature, include webinterface etc., one of the favorites as well.
But you have to pay. I tried to contact vendor, but got no response so
far...

SuSE OpenExchange:
including webinterface and good Outlook connection (seems they support all
features), but it isn't very cheap for few clients, profitable for 50+
licences

My favorite is Exchange4Linux, since source code is free (= GPL), you only
have to pay for Outlook connectors. Only problem is the lack of good docs.
See above, I have no idea how to configure the server. For example, does
anybody know how to set permissions on public folders?

Greetings, Matthias

your question is incomplete - are you looking for something as a back
end to windows / outlook clients, or a complete linux server/linux
clients system?
