Hi,
I have been looking closer at my panic and it appears it can't mount my
root on /dev/sda3, which is my / partition. What could be reasons for
this and could it possibly be cured by swapping my partitions around?

My /dev/sda is:

/dev/sda1 linuxparisc
/dev/sda2 /boot
/dev/sda3 /
/dev/sda4 extended
/dev/sda5 swap
/dev/sda6 /home
/dev/sda7 /scratch
