I wonder if Cherokee could also use these files as a 'cache'. But I'm not
really a
fanboy of mime by extension, but I guess it could make a difference.

Isn't this fixed? Use these settings:

Final rule
Matching rule: File Extension - js.gz
Handler: Static content
Transform: no compression
Add headers:
Content-Type text/javascript
Content-Encoding gzip
