Any field with Options,Label entries (e.g. Pulldown) or free-form entry (e.g. Text) reverts to its assigned Default Value whenever a "false" value is selected. Confused? Here's an example:

Create a Pulldown field which we'll ostensibly use to limit the number of widgets that are burned on our story. Call it "Number of Widgets" and set its Default Value = 10. Create a few options like so:
0,All
5,5
10,10
25,25

Now add this field to a story and select the "All" option. Save (or Save and Stay), then return to the story and you'll notice that the field has reverted to "10" which happens to be its Default Value. I suspect there is some code somewhere that evaluates the "0,All" selection as "false" (or "non-true") and subsequently selects the field's Default Value in order to rectify what it perceives as user input error.
