This is definitely a PHP issue, not an Apache issue.
But as an aside,
AddType application/x-httpd-php .php
should work fine; it is equivalent to the Add*Filter method and is
actually the recommended way to do it. But you'right, it won't
work with any currently released version of PHP. I believe
experimental support is provided as of PHP 4.2.0RC3, which was
tagged today.
