Backup
Um, how do you backup your wiki once it is running? I looked around and
didn't see anything on that subject.

set it to read-only and use the mysqldump

To backup the database, see:
http://www.mysql.com/doc/en/Backup.html

If you allow uploads, you'll want to be sure to archive the uploaded
files as well, Back these up as you would any set of files.
