Log viewer?
Is there anything like a mythtv log viewer app out there? Something that
would allow searching, viewing messages by type, etc., would be very
helpful, (as opposed to scrolling through the log file). A search on
"mythtv log viewer" didn't turn up anything.

I know you can do similar things with grep, but I'm wondering about a GUI.
Is there a general Linux log viewer that would work?

If you're running MythTV as a systemd unit, then you should be able to access
its logs through journalctl. In that case, journalctl itself provides some
filtering ability, and a quick search turns up QJournalctl
(https://github.com/pentix/qjournalctl) as a GUI option.
