Not clear if this is referring to header fields (given the "trace information")

It's the Received headers, like it says in RFC 6531.

What you put in the logs is up to you. Since they never leave the system where
they're generated they don't matter for interoperability.

So, the From-domain doesn't seem relevant here (being defined as the EHLO
name. The By-domain could be, but having it change for items received
under SMTPUTF8 seems unwise. That leaves the FOR clause, with the
(presumable destination; 5321 doesn't say) mailbox.

The testsuite has a testcase (4203) which records the following header lines
at the start of a received mail written to file:

From MAILER-DAEMON Tue Mar 02 09:44:33 1999
Return-path: <>
Envelope-to: ??????????????????????????????@japanese.??????????????????.local
Delivery-date: Tue, 2 Mar 1999 09:44:33 +0000

Please see RFC 6531, section 3.7.3.

When an SMTPUTF8-aware SMTP server adds a trace field to a message
that was or will be transmitted with the SMTPUTF8 parameter included
in the MAIL commands, that server SHOULD use the U-label form for
internationalized domain names in the new trace field.

All of the domain names in a Received header should be U-labels in an EAI
message. That would include the EHLO name in the FROM clause and the local
hostname in BY, even though I know that EHLO has to send A-labels.

Like I said, it's not a big deal, but if you want to follow the spec, that's
what it says.
